IHCL's Loya, opened at Taj West End in 2023, explores the cuisines of North India's mountains and plains through revived recipes, heirloom ingredients and slow, smoke and open-fire cooking. Dishes include burni ka jhinga and gosht reshiya kebab, with an in-house bar, Loya Paanch.
